9am The day begins with a discussion as to what the evening's feast will be.
Then follows an introduction to souk arabic before heading off to the market..aaar farrk ahrr teenee..back to the riad to make moroccan tea with the newly purchased herbs in the hidden spice souk, deep inside The Mellah.
Then the preparation of the chickens before having lunch at around 1pm
2pm - 6pm the preparations continue..
6pm - 8pm perhaps a hammam and massage..this traditional bathhouse scrub is 45 wonderful minutes..one person at a time..
8.30pm the feast begins!

'Cooking in a Village Kitchen' begins with an 8.30am departure from the medina, by car to an earth built village which you ride into upon your mule, carrying your produce from the market, if you have a Wednesday class and from the shops on other days. You will prepare couscous and tajines and make bread all to be cooked over the kitchen fire. You will roam the mountains while your lunch prepares..there are caves and waterfalls, other villages and grassy slopes to just loll..back to the riad for dinner.. |
